Chasing 275 for victory New Zealand were all out for 211, Rachin Ravindra the top scorer for the visitors with a gritty 92.
Spinners Prabath Jayasuriya (5-68) and Ramesh Mendis (3-83) shone with the ball for the hosts.
The second test, also in Galle, would begin on Thursday.
